This cake is a Christmas Eve tradition in our house. Every time I make this cake I am asked for the recipe. Just a note-DO NOT buy frosting. Use the recipe below I promise you can tell the difference!
RED VELVET CAKE
CAKE:
2 ½ cups self rising flour
1 ½ cups vegetable oil
1 tsp vanilla extract
1 ½ cups sugar
2 large eggs
1 tsp unsweetened cocoa
1 cup buttermilk
1 tsp baking soda
2 1oz bottles red food coloring
1 tsp white vinegar
Mix all ingredients together well. Pour into three round cake pans and bake for 20 minutes at 350 degrees.
FROSTING:
1 1/3 sticks of butter
1 ½ pounds powdered sugar
10 oz cream cheese softened
1 tsp milk
Beat all ingredients together and frost cooled layers.
